Jamaican Rice & Peas is absolutely tasty, cook down in fresh coconut milk, a whole scotch bonnet pepper. This is just devine!

Ingredients
2 cups or 1/2 pound Dried Kidney Beans
1 large coconut 🥥
1 whole green scotch bonnet pepper
2 pimento peppers (for flavor) cut in half
3 -4 stalks of scallion & thyme
4 gloves garlic chopped
1 tbsp salt
1 tbsp butter (optional)
2 tsp mix or all purpose seasoning
1 tbsp brown sugar (optional
3 1/2 cups parboiled rice ( or any rice)

1 & 1/2 cups of liquid for every 1 cup of rice ratio


Instructions

Wash kidney beans, then add 2 cups water along without 4 gloves of chopped garlic and put to boil
Break Coconut, cut into small pieces, add to blender along with 4 -6 cups water, blend until smooth
Strain coconut milk, then add to boiling beans, cover under low heat and allow to cook for 1 hour or until beans are fully cooked.

Make stir in between the hour

When beans are cook, add scallion & thyme, whole scotch bonnet pepper, pimento peppers, salt, mix/ all purpose seasoning, and sugar, stir, cover and allow to cook for another 5 minutes.

(Taste and add more salt if needed)

Wash rice and add to pot, mix throughly, bring to a boil, then lower the heat and allow rice to steam for 20-25 minutes or until rice grains are fully cooked.

As my trip through Guyana continued, I headed out to try something special: Guyanese Chinese food! Come with me and let’s see what Chinese food in Guyana is all about!

Guyanese Chinese food is Chinese food made using Guyanese ingredients and cooking techniques, so it’s a true fusion of the two cultures. To try some, my guide Stacey and I would be heading to the New Thriving Chinese Restaurant in Georgetown. It’s a massive restaurant and we’d be having roughly a dozen dishes there!

Inside, we headed back into the kitchen, where I saw the cooks preparing Peking duck, steamed vegetables, paradise fried rice, and more. The paradise rice contains pineapple, diced chicken, and vegetables. They serve it in a pineapple!

Next were Singapore noodles, which are like glass noodles. They pan-fry them in a wok with a sauce and then add vegetables. Then, they also made a sweet & sour chicken. They batter and fry the chicken and then stir-fry them in a sauce with vegetables.

We tried the sweet & sour chicken right in the kitchen. It was sour and sweet but also had some heat to it. The chicken was perfectly cooked, and the sauce was like a nice glaze.

Then, they fried some eggplant they’d cut into spirals and skewered. They deep-fried them, plated them, and then added a sweet chili sauce on top.

The sweet chili eggplant was phenomenal! It was so soft on the inside but crispy on the outside. It was the best fried eggplant I’ve ever eaten! The sauce was insane! They followed that by making pinecone fish, which they batter and fry until it looks like a pinecone. Then, they top it with sauce and vegetables!

They also made some lightly fried beef and some rice with vegetables. I was loving the Cantonese cuisine with a Guyanese twist!

At our table, we had all of our dishes on a lazy Susan. I started with my coconut water and then jumped on the Singapore noodles, stir-fried vegetables, steamed dumplings, Peking duck, and more.

The Singapore noodles were beautiful and light, and the stir-fried beef melted in my mouth. The sauce was incredible and sweet, with a bit of heat. I also loved the lightness and tropical flavors of the paradise fried rice. The pineapple was fantastic!

I also loved the pinecone fish. It reminded me of a similar fish dish I’d had in Suzhou, China back in 2019. The sweet and sour sauce on it was delicious. The batter was perfect. The steamed garlic prawns were also incredible. There was garlic flavor, but it wasn’t super potent.

Then, we grabbed some of the wraps and placed the Peking duck and sauce inside, along with a crispy rice cracker. Everything together was heavenly. The skin of the duck was nice and crispy, just the way I like it!

#7 Plantain Chips

We thought we would start off this list with one very simple dish. It’s no secret that the Guyanese love plantains, but did you know that making chips from this banana-like vegetable is actually one of the favorite snacks of the nation?
There’s not a party that goes by where you won’t get a hefty serving of some plantain chips right next to the rum punch. Whether it’s with salsa or just plain, you can find them all over Guyana. Supermarkets and grocery stores are full of them. https://crossbuns.com

#6 Egg Balls

And from a simple dish, we move down to one of the more complex traditional foods. It’s called an egg ball, and it’s made with, you guessed it, eggs.
You first need to hard boil some eggs. While the eggs are cooking on the stove, you need to peel and cut your cassava. You boil that as well and then you mash it. Once it’s all nicely mashed, you will add chili paste, garlic, some spices, salt to taste and of course, an egg to bind it all together.
You then peel the eggs, and cover them inside a handful of mashed cassava. The Egg and cassava ball will be rolled into some flour and deep fried. We don’t think we need to tell you how delicious these are, right?!

#5 Chicken Foot

We thought it would be kind of weird to note that they have fried-chicken as a traditional dish, but it’s true that the Guyanese love themselves some chicken. They eat it for breakfast, lunch and dinner, baked, friend, boiled and in a stew… and they’ve even named a street food after it.
It has nothing to do with chicken, but the people love it so much that they decided to name this fried, doughy street food after it. It’s a dough with curry and cumin that is fried and you can get it as a snack. You better do, because it’s one of the most popular dishes in the country.

#4 Roti

This is one of the traditional flat breads of Guyana, and the special technique of cooking makes the bread absolutely to die for.
It’s made from wheat flour, water, salt and baking powder. But the thing that makes it special is the oil. They add it to the dough after the first roll, they add it after the second roll, and then they coat it a third time during cooking. That’s what makes it fluffy, moist and a must have with every stew, curry or soup.

#3 Metemgee


If you’re wondering what Metemgee is, then here’s a little insider info. It’s a stew made with coconut milk, huge chunks of plantains and cassava. That takes care of the earthy taste that is typical for Guyanese cuisine, but it’s not nearly finished.
You also need to add some salted fish into the mix, and those soft and melt in your mouth buttery dumplings that you add to the stew right before taking it off the heat. This is a dish that must be on your “have to try”-list if you ever go to Guyana.

#2 Pepperpot

This is the dish that you will see in Guyana on Christmas Morning. Almost every household prepares it and accompanies it with some home-cooked bread. The authentic flavor derives from the cassareep, which is cassava-root syrup.
It usually consists of beef, cinnamon, some onions and garlic, and of course, cassareep. You add all these ingredients to a pot, pour in some water, and cook for several hours. This will intensify the flavor, and make the meat melt in your mouth. Mh-mmm.

#1 Cassava Bread

For our last pick, we decided to include one of the staples of the country, the Cassava Bread. It’s made from, you guessed it, cassava roots, and you will find it accompanying almost every dish in Guyana. guyana food is one of the best.
