I’m in The Bahamas to hunt down the cheapest and most expensive food this island has to offer. We’re starting on the low end at Bamboo Shack and Checkers Cafe, tasting the real local fast food that Bahamians actually eat. Then I’m heading into the Straw Market to meet the artists and vendors who work nonstop and still struggle to compete with big tourism money.
After that, it’s breakfast at Captain Vinny’s before we head out on a boat to try the famous pigs and eat fresh seafood right on the water. We’re checking out Antiki, the floating bar with surprisingly good food and some of the best island vibes in Nassau.
And then we go all the way to the top with Sapodilla Estate, one of the most luxurious fine dining experiences in The Bahamas. From the cheapest plates to the priciest meals, this is the real story of Bahamian food.

🦞LOBSTER QUESADILLA: Boil dice carrots, onion, and celery. Add lobster and let boil for 10-15 minutes. Once boiled, remove lobster from the pot and place in an ice bath. Remove the lobster meat from the tail, then dice the meat. Separately, mix together grated pepper jack cheese, white cheddar cheese & 3 stems of scallions. Lightly brush olive oil on the outer part of the 10-inch tortilla. Sprinkle ancho chili powder. Add cheese. Add chopped lobster meat and sprinkle a touch of cheese then close. Place on a flat top grill and let cook until golden brown on both sides.Squeeze chipotle Cremer on top and drizzle salsa in the middle. Sprinkle green onions on top.

🦞LOBSTER STUFFED BANANA LEAF: Grill the banana leaf on the grill to make it pliable. Place the banana leaf down first, then add the three ounces of the cook grits as the base. Add two ounces of lobster filling on top of the cooked grits. Oil all 4 sides of the banana leaf to help it stick together and fold. Once that is done oil the grill and place the stuff banana leaf on the grill and cook for 6-8 mins. Once complete open the stuff banana leaf and garnish with the mango salsa, micro greens and olive oil.

4. FRANKIE GONE BANANAS

🦞LOBSTER TAIL: Blend ingredients (Cilantro, parsley, spring onions, garlic cloves, ginger, lime juice, lemon juice, olive oil, jerk sauce, fresh orange juice, sea salt and pepper) together. Rub evenly on Lobster, place on an open grill to mark. Remove from the char grill and place in an oven at 350 degrees for 20 minutes. Serve with salad, sweet potatoes & salad
🥗JUNKANOO AVOCADO SALAD: Peel and dice mango, pineapple and avocados. Slice purple red orions and heirloom tomatoes. Place all ingredients (including fresh orange juice, lemon juice, small red onion (sliced) & lime juice) in a mixing bowl and toss, season with salt and pepper.
🍌PLANTAIN: Toss plantains with olive oil and roast until golden brown. Take out of the oven and sprinkle on cinnamon and honey.

🇧🇸 CRAB N DOUGH: Break the legs and remove them from the crab’s body
In a pot, add crabs then place dough. Combine flour, baking powder and salt, mixed with water. Make a firm dough. knead well and allow to rest 10 minutes. In a large pot, add a cup of water seasoned with salt, add pepper, and bring to a boil. Flatten dough and place over the crab. Cover the pot, boil on medium heat for 20 – 25 minutes without opening the pot.

4 cups (2 lbs.) Mahatma Long grain Parboiled Rice
4 cups of water
1 tin of Pigeon Peas
1/2 medium onion (chopped small)
1/2 medium bell pepper (chopped small)
1 stalk of celery (chopped small)
2 pot spoons of oil
cooking thyme
1 medium ripe tomato (chopped small)

Kenneth McKenzie runs McKenzie’s Fresh Fish and Conch Shack, a popular oceanfront seafood shack set on the pristine waters of Nassau, Bahamas. Kenneth, who learned to cook as a child, serves up shrimp, lobster, and snapper, but the star menu item is fresh conch pulled right out of the water. Conch, large native sea snails, are prepared in fritters, fried in rice, and served in cold salads with hot peppers, diced vegetables, and soaked in citrus juice. McKenzie’s Fresh Fish and Conch has grown from one table to a thriving seafood destination and Kenneth feels grateful his career has kept him on a path toward success.

Trying The Best CARIBBEAN Food In Washington DC
Are you ready for a taste of the tropics? In this episode of Heat Eaters, our host, Chef Esther Choi, embarks on a fiery food journey through the vibrant Little Caribbean neighborhood in Brooklyn, NY.
Esther's culinary adventure starts off at Irie Jerk Chicken, where she links up with singer and Brooklyn-native, Justine Skye. Together, they feast on succulent Jamaican spicy jerk chicken paired with sweet festival bread, and eat scotch bonnet peppers straight from a spicy escovitch sauce.
Next, Esther joins her friend Pierre "Chef P" Serrao, co-founder of the Bronx Culinary Collective - Ghetto Gastro. Together they hit up Ariapita, renowned for its authentic Trinidadian Homestyle cuisine. Chef Osei "Picky" Blackett serves up a medley of Trinidadian dishes, including spicy fruit chow, Chinese-style wings, and flavorful oxtail curry - all accompanied by a side of explosive Trinidad Scorpion Pepper Sauce. Ranked next to the notorious Carolina Reaper, the Trinidad scorpion pepper is revered as one of the world's hottest peppers!
In the grand finale, Chef P and Esther meet up with Andre Springer, the founder and mastermind behind Shaquanda's Hot Pepper Sauce - well known for being featured on Hot Ones. The culinary trio steps into the kitchen to cook up saltfish takoyaki, a recipe from Ghetto Gastro's 'Black Power Kitchen' cookbook. MONTEGO BAY, JAMAICA - Today was an ultimate Jamaican food day - including many of the island’s best comfort foods and family gathering foods. We headed to the river, to cook up Jamaican curry goat, oxtail stew, and ackee and saltfish. Turned into an epic meal, great people, and an ultimate food experience in Jamaica.

Sunday is family day in Jamaica and so we all headed out to the river for a Jamaican curry goat link-up! But to get there, we took a bamboo raft, something that’s known in Jamaica, and extremely fun and relaxing. It was about a 15 minute bamboo raft ride to get to the site where Matt and the Chef’s were setting up and ready to prepare this epic Jamaicna food feast.
- Curry Goat - It would not be a party or a get together in Jamaica without curry goat, and it’s one of Jamaica’s best dishes.
- Oxtail stew - We also made oxtail stew, a rich blend of oxtail including the meat, fat, and skin. The texture was insane.
- Ackee and Saltfish - Additionally Chef made ackee and saltfish, the national food of Jamaica and easily my favorite dish of Jamaica as well. Loved it!
- Peppa shrimp - And to begin this incredible meal, we started with some peppa shrimp - scotch bonnet pepper with freshwater crayfish.
And outstanding day, and a Jamaican food experience I’ll never forget!

This homemade Jamaican Patty is so absolutely delicious, flaky tasty crust, simple instructions.

**Patty Dough Crust **
4cups all purpose flour
1 tsp baking powder
3 tsp turmeric powder
1 tsp curry powder
1 tbsp sugar
1 tsp salt
1/2 cup butter or Margarine
1/2 cup vegetable shortening (Crisco or
Cookeen)
3/4 cup cold water
**Beef Filling Ingredients **
1 1b ground beef
1 tsp salt
2 tbsp Jerk Seasoning
1 tsp black pepper
1 cup onion & garlic (finely chopped)
1/2 cup scallion & thyme (finely chopped)
Scotch bonnet pepper (chopped)
2-3 tbsp soy sauce mix with 1 cup water
1/4 cup bread crumbs
Bake at 350 degree for 35-40 minutes
Oven temperature varies… make take longer

Jamaican Rice & Peas is absolutely tasty, cook down in fresh coconut milk, a whole scotch bonnet pepper. This is just devine!
Ingredients
2 cups or 1/2 pound Dried Kidney Beans
1 large coconut 🥥
1 whole green scotch bonnet pepper
2 pimento peppers (for flavor) cut in half
3 -4 stalks of scallion & thyme
4 gloves garlic chopped
1 tbsp salt
1 tbsp butter (optional)
2 tsp mix or all purpose seasoning
1 tbsp brown sugar (optional
3 1/2 cups parboiled rice ( or any rice)
1 & 1/2 cups of liquid for every 1 cup of rice ratio
Instructions
Wash kidney beans, then add 2 cups water along without 4 gloves of chopped garlic and put to boil
Break Coconut, cut into small pieces, add to blender along with 4 -6 cups water, blend until smooth
Strain coconut milk, then add to boiling beans, cover under low heat and allow to cook for 1 hour or until beans are fully cooked.
Make stir in between the hour
When beans are cook, add scallion & thyme, whole scotch bonnet pepper, pimento peppers, salt, mix/ all purpose seasoning, and sugar, stir, cover and allow to cook for another 5 minutes.
(Taste and add more salt if needed)
Wash rice and add to pot, mix throughly, bring to a boil, then lower the heat and allow rice to steam for 20-25 minutes or until rice grains are fully cooked.

Mexican Dads try Jamaican food! 🇯🇲
Our papas were in for a treat when we asked them to try some delicious dishes from the beautiful island of Jamaica! 🌴
Among those tasty treats were Jamaican chicken curry patties which are a savory chicken pastry. Jamaica's national dish, ackee and saltfish, was a delicious one that surprised our dads. Spicy jerk chicken was served with fried plantains and festival bread. The dads had some comforting oxtail with rice and peas, as well as curried goat with boiled dumplings. To end the meal, we served the papas some sorrel and Jamaican black cake!

Montego Bay, Jamaica is more than just luxury resorts and white sand beaches. Join Mark Wiens on a 24-hour Jamaican food tour to discover why its a powerhouse of Caribbean flavor. He'll dive deep into the local culture to find the best jerk chicken, fresh seafood, and traditional Rastafarian Ital food, and learn what makes Jamaican food so special.
Mark's 24-hour tour begins at Unity Hall Fishing Village where local fishermen bring in their catch at the first morning light following a night of fishing. On the menu today is Doctorfish Tang, known as "Bunafinga," a fish thought to be a powerful aphrodisiac, spiny lobster, and Caribbean King crab, all roasted over an open fire and shared with friends.
Breakfast number two finds Mark at Pinchaz Bar and Grill, where he meets Oshane Johnson. There, he eats the national food of Jamaica: ackee and saltfish accompanied by salted mackerel rundown.
Next on the food tour, Mark meets up with Ashani Green, owner of Ras Greenies Ital Kitchen, which specializes in plant based Rastafarian Ital food. On the menu today, there's Ital stew, pumpkin soup, callaloo, and a mixture of ground provisions aka root crops like yams, sweet potatoes, bananas, and roasted breadfruit.
Charles Gordon Market is Montego Bay’s central fresh market. Mark meets up with content creator and friend Matthew Robinson to explore local Jamaican ingredients like pimento and most importantly, scotch bonnet peppers, which Mark intends to try raw despite warnings from a passerby.
With his new first-hand knowledge of the ingredients, Mark visits The Pork Pit, an Montego Bay institution. Mark eats one of the iconic meals, jerk chicken and jerk pork doused in their spicy chili sauce. He then visits another Jamaican favorite, Patty's, to try beef, cheese, and a chicken and cheese patty.
As the sun goes down in Jamaica, Mark meets up with Matthew Robinson again at Doctor's Cave Beach for a sunset drink - the Jamaican way. Following the drink, they begin a late-night Jamaican street food adventure at the Hip Strip. Mark and Matt head over to Red Hat Jerk Pan Chicken to try a version of jerk chicken that's grilled in barrel drums and served with plenty of hot sauce.
Montego Bay offers an unbeatable window into Jamaica's soul. From the smoky pits of the best jerk chicken to fresh, plant-based traditions of Rastafarian Ital food, Montego Bay is a Jamaican food paradise, centered by the warm and joyful people that call the island home.
